Honjozo - Honjozo falls under the category of tokuteimeishoushu, known as "special designation" sake. It is infused with a small dose of distilled alcohol near the end of the fermentation of the moromi. Typically, Honjozo sake is lighter and drier compared to Junmai varieties.
Namachozo- Nama-Chozo sake undergoes one pasteurization process instead of the usual two-step process. It skips the first pasteurization stage and moves directly to the second, distinguishing it from 'Nama-Zume' sake with only the first pasteurization, and 'Nama-Zake' sake, shipped without pasteurization.
